Description

Meatball Subs. From Olivia.

Ingredients

Scale
  • 1 pound (450g) ground beef
  • 1/2 cup (40g) breadcrumbs
  • 1 egg
  • 1/4 cup (25g) grated parmesan
  • 1 teaspoon salt
  • 1 garlic clove, grated
  • 2 cups (480ml) marinara sauce
  • 4 sub rolls
  • 1 cup (100g) shredded mozzarella

Instructions

  1. Heat the oven to 400°F (200°C). Mix beef, breadcrumbs, egg, parmesan, salt, and garlic. Roll 12 meatballs.
  2. Bake the meatballs on a sheet for 12 minutes.
  3. Simmer them in the sauce for 8 minutes.
  4. Toast the rolls. Fill with meatballs, sauce, and mozzarella. Heat until the cheese melts.

Notes

Toast the rolls so they do not collapse under the sauce.

Mix

Do not knead the meat. A gentle mix stays tender.

Bake

The sheet browns them. A simmer from raw leaves them gray.

Roll

A sturdy sub roll. A soft hot-dog bun dissolves.

Cheese

On at the end so it melts instead of boiling in the sauce.
