Ingredients

  • 1 tablespoon (15ml) oil
  • 1/2 pound (227g) breakfast sausage or 4 slices bacon, chopped (optional)
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 can (15 ounces / 425g) black beans, drained and rinsed
  • 8 large eggs, beaten with 2 tablespoons milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cumin
  • 1 1/2 cups (170g) shredded cheddar or Mexican blend
  • Warm flour tortillas, salsa, cilantro, lime

Instructions

  1. Heat oil in a 12-inch skillet over medium. Brown sausage or bacon if using; leave about 1 tablespoon fat.
  2. Add onion and pepper. Cook 5 minutes. Stir in beans, salt, and cumin. Heat 2 minutes.
  3. Push the mix to the sides. Pour in the eggs. Scramble gently until just set, folding the vegetables back in.
  4. Scatter cheese. Cover 1 minute to melt. Serve with tortillas, salsa, cilantro, and lime.

Notes

Skip meat for a bean-and-egg skillet. Leftover roasted potatoes can go in with the peppers.
