Ingredients
One drink
- 2 ounces (60ml) white peach puree, chilled
- 4 ounces (120ml) dry prosecco, chilled
- Peach slice, for garnish
Puree (about 8 drinks)
- 1 pound (454g) ripe white or yellow peaches, peeled and sliced
- 1 tablespoon (12g) sugar, or to taste
- 1 teaspoon lemon juice
Instructions
- Blend peaches, sugar, and lemon until smooth. Strain if you want it silkier. Chill.
- Spoon the puree into a chilled flute. Tilt and pour prosecco slowly so it does not foam over.
- Stir once with a bar spoon. Garnish with a peach slice. Serve immediately.
Notes
Frozen peaches, thawed, work in winter. Champagne is drier and more expensive; prosecco is the classic sparkler here. Do not use peach schnapps as the whole drink — that is a different cocktail.
