Cutlets

A quarter inch. Thicker and the middle stays pale.

Crumbs

Dry, not fresh. Fresh crumbs go soggy.

Oil

Shallow, hot, and do not crowd.

Lemon

A squeeze at the table. It cuts the fry.

Nutrition (estimated)

About 320 calories per serving. Estimate only, not a lab test.

FAQ

Chicken?

Same breading, a minute longer.

Storage

Best the hour you fry it.

Pan

A wide skillet so two fit without touching.

Sauce

Lemon is enough. A cream sauce is a different plate.
