Description

Beef Tacos. From Olivia.

Ingredients

Scale
  • 1 pound (450g) ground beef
  • 1 small onion, chopped
  • 2 garlic cloves
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) water
  • 8 corn tortillas
  • Chopped onion, cilantro, and lime for serving

Instructions

  1. Cook the beef and onion in a skillet until the beef is browned. Drain the extra fat.
  2. Stir in garlic, chili powder, cumin, and salt for 30 seconds. Add the water and simmer until it is gone.
  3. Warm the tortillas in a dry skillet, about 20 seconds per side.
  4. Fill with beef and top with onion, cilantro, and lime.

Notes

Warm the tortillas in a dry skillet so they bend instead of crack.

FAQ

Corn or flour tortillas?

Corn is the classic for this filling. Flour works if that is what you have.

Ground turkey?

Yes, with an extra teaspoon of oil so it does not stick.

Make the meat ahead?

Refrigerate 3 days. Loosen it with a splash of water when you reheat.

Spice level?

Chili powder is mild. Add a pinch of cayenne if you want heat.
