Description

Horchata. From Olivia.

Ingredients

Scale
  • 1 cup (185g) uncooked long-grain rice
  • 1 cinnamon stick
  • 4 cups (960ml) water
  • 1/2 cup (100g) sugar
  • 1 teaspoon vanilla
  • 2 cups (480ml) milk
  • ground cinnamon

Instructions

  1. Soak the rice and cinnamon stick in the water overnight in the fridge.
  2. Blend until smooth. Strain through a fine sieve or cloth.
  3. Stir in sugar, vanilla, and milk. Serve over ice with a pinch of cinnamon.

Notes

Strain it well. Grit in the glass means the blend was not fine enough or the cloth was loose.

Soak

Overnight. Two hours is not enough for the rice to soften.

Strain

A clean kitchen towel if you do not have a fine sieve.

Milk

Dairy or a plain unsweetened milk. Add it after straining.

Sweet

Start with 1/2 cup sugar. Taste.

Nutrition (estimated)

About 320 calories per serving. Estimate only, not a lab test.

FAQ

Rice milk only?

Skip the dairy milk and add another cup of water. It will be thinner.

Cinnamon powder in the soak?

Use the stick. Powder does not strain out cleanly.

Storage

Fridge, 3 days. Shake it. The rice solids settle.

Booze

This is the non-alcoholic drink. A splash of rum is a different glass.
