Description

Sheet pan sausage and peppers. From Olivia at Flavors.

Ingredients

Scale
  • 1 1/2 pounds (680g) Italian sausage links
  • 3 bell peppers, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon oregano
  • 1/2 teaspoon pepper
  • 2 garlic cloves, smashed
  • Soft rolls, optional

Instructions

  1. Heat the oven to 425°F (220°C). Toss peppers and onion with oil, salt, oregano, pepper, and garlic on a sheet pan.
  2. Nest the sausages in the vegetables.
  3. Roast 25 minutes. Turn the sausages. Roast 10 to 15 minutes more until the sausages are cooked through and the peppers are browned at the edges.
  4. Slice the sausages if you want. Serve with the vegetables, or pile both into rolls.

Notes

Do not crowd the pan or the vegetables steam. Use two pans if the peppers sit in a heap. Chicken sausage needs less time. Check it early.

Sausage pan, not lemon chicken

Sheet-pan lemon chicken is a different dinner on this site.

Substitutions

Hot or sweet sausage both work. Add a pinch of fennel if the links are plain.

Mistakes to avoid

A cool oven browns nothing. Wait until it is fully preheated.

Storage

Refrigerate 3 days. Reheat on a hot pan so the peppers do not go limp.

Nutrition (estimated)

About 480 calories per serving without the roll. Estimate only, not a lab test.
