Description

Ingredients

  • 1 can (15 ounces / 425g) whole kernel corn, drained
  • 1 can (15 ounces / 425g) creamed corn (do not drain)
  • 1 cup (240g) sour cream
  • 1/2 cup (113g) unsalted butter, melted
  • 1 box (8.5 ounces / 240g) Jiffy corn muffin mix
  • 2 large eggs
  • 1/2 teaspoon kosher salt
  • 1 cup (113g) shredded cheddar (optional)

Instructions

  1. Heat the oven to 350°F (175°C). Grease a 2-quart or 9-inch baking dish.
  2. Stir both corns, sour cream, melted butter, muffin mix, eggs, and salt until combined. Fold in cheddar if using.
  3. Spread in the dish. Bake 45 to 55 minutes until the center is set and the top is golden. Rest 10 minutes.

Notes

The center should barely jiggle. Extra 5 minutes if your dish is deep. Leftovers reheat better than they look.

Cornbread is sliced from a skillet. This is a spoonable pudding-casserole. Keep them separate.

Substitutions

Greek yogurt can replace sour cream. Frozen corn, thawed and drained, can replace canned kernels.

Mistakes to avoid

Do not drain the creamed corn. Do not overbake until it dries out at the edges only.

Storage

Refrigerate 4 days. Reheat covered at 325°F. Freeze baked portions 1 month.

FAQ

Can I make it without Jiffy?

A homemade mix of 2/3 cup flour, 1/2 cup cornmeal, 3 tablespoons sugar, 1 tablespoon baking powder, and a pinch of salt works.

Is this cornbread?

No. It is wetter and spoonable. Cornbread is a separate bake.

Can I assemble ahead?

Mix up to 8 hours ahead and refrigerate. Add 10 minutes to the bake.

Sweet or savory?

Mildly sweet from the mix. Cheddar pulls it savory.
