This eggs benedict recipe is a poached egg, ham, and hollandaise on an English muffin. It is not the sausage egg breakfast casserole and not the breakfast burrito skillet.

Eggs Benedict
- Total Time: 30 minutes
- Yield: 4 servings 1x
Description
Eggs benedict with hollandaise. From Olivia at Flavors.
Ingredients
- 4 slices Canadian bacon or ham
- 2 English muffins, split and toasted
- 4 eggs
- 1 tablespoon vinegar, for the water
- 3 egg yolks
- 1 tablespoon lemon juice
- 1/2 cup (113g) butter, melted and hot
- Salt and cayenne
Instructions
- Blend or whisk yolks and lemon. Stream in hot melted butter while blending until the hollandaise is thick. Season with salt and a pinch of cayenne. Hold it warm, not hot.
- Simmer a pan of water with vinegar. Poach eggs 3 minutes for soft yolks. Lift them out.
- Warm the ham in a skillet. Toast the muffins.
- Stack muffin, ham, egg, and hollandaise. Serve immediately.
Notes
Hollandaise splits if the butter is boiling or if you add it too fast. A splash of warm water brings a tight sauce back. This is a brunch plate, not a casserole.

A plated brunch, not a casserole
The sausage breakfast casserole is a bake. This is eggs to order.
Substitutions
Smoked salmon turns it into a different plate. Keep ham for this URL. Spinach under the egg is a fair add.
Mistakes to avoid
A rolling boil shreds the whites. Keep the water at a shiver.
Storage
Eat it now. Hollandaise and poached eggs do not keep well.

FAQ
Blender or whisk?
A blender is more reliable. A bowl and whisk work if the butter goes in slowly.
Why did the sauce break?
The butter was too hot or too fast. Whisk in a teaspoon of warm water off heat.
Canadian bacon or ham?
Canadian bacon is the usual round. Thin ham works.
Make the eggs ahead?
Poach them and hold in cool water for an hour. Rewarm 20 seconds in hot water.
