Peach Bellini

Peach bellini in a champagne flute with peach puree and a peach slice garnish

This peach bellini is peach puree and prosecco — the Harry’s Bar ratio, not a rum drink. Flavors already has the classic mojito and skinny margarita. Use this URL when the search is peach bellini.

Description

Peach bellini with peach puree and prosecco. From Olivia at Flavors.

Ingredients

Scale

One drink

  • 2 ounces (60ml) white peach puree, chilled
  • 4 ounces (120ml) dry prosecco, chilled
  • Peach slice, for garnish

Puree (about 8 drinks)

  • 1 pound (454g) ripe white or yellow peaches, peeled and sliced
  • 1 tablespoon (12g) sugar, or to taste
  • 1 teaspoon lemon juice

Instructions

  1. Blend peaches, sugar, and lemon until smooth. Strain if you want it silkier. Chill.
  2. Spoon the puree into a chilled flute. Tilt and pour prosecco slowly so it does not foam over.
  3. Stir once with a bar spoon. Garnish with a peach slice. Serve immediately.

Notes

Frozen peaches, thawed, work in winter. Champagne is drier and more expensive; prosecco is the classic sparkler here. Do not use peach schnapps as the whole drink — that is a different cocktail.

Bellini, not a mojito

Mojitos are mint and rum. Margaritas are tequila. This is peach and prosecco.

Substitutions

Canned peach puree works if you taste for sugar. Sparkling water makes a mocktail — still this method.

Mistakes to avoid

Do not use warm puree (it kills the bubbles). Do not shake prosecco in a shaker.

Storage

Puree keeps 3 days refrigerated or 1 month frozen. Mix each glass to order.

Nutrition (estimated)

About 140 calories per flute. Estimate only, not a lab test.

FAQ

White or yellow peaches?

White peaches are the Venetian classic. Yellow peaches are fine and a little tarter.

Can I use champagne?

Yes. Prosecco is traditional and usually cheaper.

Pitcher for brunch?

Keep puree and prosecco separate. Combine in each glass so it stays fizzy.

Is this a mimosa?

No. Mimosa is orange juice and sparkling wine. Bellini is peach.
